Broccoli quiche with walnuts and goat cheese

One of my favourite things to cook for myself is a quiche. It takes a little while to cook, but makes such a great treat in the lunch box for next day.

Crust:

  • 100g butter
  • 200-300ml flour
  • 1 tsp salt
  • 3 tbs water
Pinch butter, flour and salt together to fine grains like in the picture below. Then add water and squeeze it into a dough. Let sit in the fridge while you prepare the filling.

Filling:

  • 1 crown of broccoli
  • ½ a leek
  • a bunch of baby spinach
  • a handfull of walnuts
  • goat cheese
  • 3 eggs
  • 200ml cream (10%)
  • some ground cheese (cheddar or other)
  • a pinch of nutmeg
  • italian spice mix (oregano, thyme, tarragon)
  • salt & pepper
Chop up the veggies.
Stir together eggs,  cream, grated cheese and spices.
Take the dough out of the fridge and press it into a pie-crust covering a glass ovenwear.
Add all the ingredients and bake in the oven at 175°C for about 40 min.
