One of my favourite things to cook for myself is a quiche. It takes a little while to cook, but makes such a great treat in the lunch box for next day.
- 100g butter
- 200-300ml flour
- 1 tsp salt
- 3 tbs water
Pinch butter, flour and salt together to fine grains like in the picture below. Then add water and squeeze it into a dough. Let sit in the fridge while you prepare the filling.
- 1 crown of broccoli
- ½ a leek
- a bunch of baby spinach
- a handfull of walnuts
- goat cheese
- 3 eggs
- 200ml cream (10%)
- some ground cheese (cheddar or other)
- a pinch of nutmeg
- italian spice mix (oregano, thyme, tarragon)
- salt & pepper
Chop up the veggies.
Stir together eggs, cream, grated cheese and spices.
Take the dough out of the fridge and press it into a pie-crust covering a glass ovenwear.
Add all the ingredients and bake in the oven at 175°C for about 40 min.
