Mudcake – chocolate cure for the winter sniffles

Since David’s caught a cold and we all know that cocoa it the ultimate cure for disease, I decided to make him (and me) a chocolate mudcake. In Swedish we call them kladdkaka which means goo or gunk cake and refers to the lovely stickyness of this pastry.

This is what you need:
  • 3 eggs
  • 150 ml all-purpose flour
  • 350 ml sugar
  • 150g melted butter
  • 6 tbs coacoa powder
  • 2 tsp vanilla sugar
  • 50 ml brewed coffe/water/liqueur
  • chocolate chips
  • hazelnuts (filberts)
  • breadcrumbs
  • icing sugar

Mix eggs, sugar and flour until there are no lumps. 

Add the melted butter, the vanilla sugar, the coffe and the coacoa powder and stir it into a smooth paste. Add the chocolate chips in the end.

Rub the cake pan with butter so that breadcrumbs stick to the bottom. Pour the paste into the cake pan and add some hazelnuts on top for decoration. Bake in the oven for about 20 min at 200ºC. Take it out before it becomes solid.

Let the cake cool down before serving and decorate by sprinkling icing sugar on top.
